At Yard to Table Creations, we love growing and cooking with ingredients that connect us to history, culture, and sustainability. And few foods tell a better story than the Hass avocado—the little fruit that became a giant in the world of agriculture. But have you ever wondered where the Hass avocado came from? Spoiler alert: it wasn’t planned, and its road to popularity was as bumpy as its famous skin.

A Mailman with a Green Thumb

The story of the Hass avocado starts in the 1920s with a California mail carrier named Rudolph Hass. He wasn’t a scientist, a farmer, or a big-name agriculturalist—just a guy who loved growing trees. Hass had bought some avocado seeds and planted them in his La Habra Heights yard, hoping to grow the smooth, green-skinned Fuerte avocado, which was the dominant variety at the time.

But one of his seedlings turned out… different. The tree produced smaller, darker, and bumpier avocados than the Fuertes everyone was used to. At first, he thought about chopping it down, but his kids insisted they liked the taste better. So, he let it grow—and, as it turned out, so did everyone else. The richer, creamier texture and nutty flavor made the Hass avocado an unexpected hit.

Oh, and let’s not forget that before it became the beloved avocado, this fruit had a much more, let’s say, “scaly” name—the alligator pear. While it’s easy to see where the name came from (dark, rough skin and an elongated shape), it’s safe to say “avocado toast” might not have taken off quite the same way if we were still calling it “alligator pear toast.”

From Backyard to Worldwide Sensation

Hass patented his tree in 1935—the first-ever patent for an avocado tree. He partnered with a local grower named Harold Brokaw to graft and distribute the new variety. But even with the patent, nature had the last laugh. Every Hass avocado tree in the world today descends from that one original tree in Hass’s yard. Grafted cuttings spread the variety, and eventually, the Hass tree became the standard for commercial avocado farming. In fact, about 95% of avocados sold today are Hass!

Hass himself, however, didn’t strike it rich. Avocado trees live much longer than a 17-year patent, and once his expired, growers no longer had to pay for his variety. He earned some money, sure, but the real jackpot was claimed by the avocado industry, which boomed thanks to his accidental discovery.

The Problem with Modern Hybridization

The rise of the Hass avocado is a success story—but it also reveals the challenges of modern agriculture. When farmers select crops for traits like shelf life, yield, and transportability, something often gets left behind: flavor. While the Hass is delicious, many other varieties of avocados—some with even richer flavors, like the creamy Reed, the smooth and nutty Bacon, the large and buttery Nabal, and the flavorful, oil-rich Fuerte—have been pushed aside because they don’t ship as well or look as uniform on grocery store shelves.

This isn’t just an avocado problem. The same thing has happened to tomatoes (hello, rock-hard grocery store tomatoes), apples (farewell, funky heirloom varieties), and countless other fruits and vegetables. Hybridization has given us crops that can withstand long-distance shipping and long shelf lives, but at the cost of some of the incredible diversity of flavors that nature has to offer.

Grow Your Own for Maximum Flavor

Luckily, there’s an easy solution: grow your own! At Yard to Table Creations, we’re all about cultivating homegrown ingredients that bring back those rich, authentic flavors. Avocados can take patience (a tree grown from seed can take 10+ years to bear fruit!), but with grafted trees, you can have homegrown Hass avocados in just a few years.

If you’re feeling adventurous, why not seek out and plant other avocado varieties? Bacon, Pinkerton, and Reed avocados all offer delicious flavors that you won’t find in your average grocery store.

So next time you slice open a perfectly ripe Hass avocado, take a moment to appreciate its unexpected history. And if you’ve ever had a fruit or vegetable in your garden that didn’t turn out as expected—hey, you never know! You might just have the next big thing growing in your backyard.
