When it’s chilly outside (or at least San Diego’s version of chilly), there’s nothing better than a warm, hearty soup made with garden-fresh ingredients. Here’s a recipe that will warm you up faster than a cup of cocoa!
Cozy Winter Veggie Soup
Your garden in a bowl—pure comfort food.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 3 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 cup kale or spinach, chopped
- 3 cups vegetable broth (or chicken broth)
- 1 cup diced tomatoes (canned or fresh)
- 1 cup cooked beans (any kind—whatever’s in the pantry)
- 1 tsp dried thyme or rosemary (or both!)
- Salt and pepper to taste
- Optional – add any cooked proteins like bacon, sausage or ground beef
Instructions:
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant (and your kitchen smells amazing).
- Add carrots and celery. Cook for 5 minutes, stirring occasionally.
- Pour in the broth, tomatoes, and beans. Stir in thyme/rosemary, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes. Toss in the kale or spinach during the last 5 minutes of cooking.
- Ladle into bowls, serve with crusty bread, and bask in the glow of your soup-making genius.
